The extra virgin olive oils Sapparis are produced in Umag – Istra, for a number of years now
This is the only blend of oils of various sorts of olives which are produced in our plantations: Istrian bjelica, Leccino, Frantoio, Pendolino, Casaliva and Moraiolo. Depending on the sorts, we offer our olive oil Sapparis with multiple tags: Golden, Silver and Bronze.
The monosort extravirgin olive oils produced by the Čeko family are:
ISTRIAN BJELICA
Characteristics:
• Type of oil: very spicy and bitter
• Colour: golden green
• Smell: on freshly cut grass
• Taste: olive, radicchio, wild asparagus, almond
This sort goes well with meat dishes (beef, lamb, grilled chicken) or hard cheeses and spinach salad.
LECCINO
Charateristics:
• Type of oil: light oil, of very mild bitterness and spiciness
• Colour: dark green
• Smell: strong fresh smell of the olive
• Taste: aromatic spices, artichokes, chicory, sweet almond
This sort goes well with seasonal salads, grilled cuttlefish, raw shrimps, raw fish. It emphasizes the taste and it can be combined with desserts.
FRANTOIO
Characteristics:
• Type of oil: mild bitterness and spiciness
• Colour: light green
• Smell: pronounced fruit smell
• Taste: dominant flavour of green olive and aromatic spices
This sort goes well with truffles, wild asparagus, mature cheeses, wild meat and beef steak
PENDOLINO
Characteristics:
• Type of oil: very mild bitterness and spiciness
• Colour: light green to golden yellow
• Smell: freshly cut clover, olives, almond
• Taste: dominant flavour of green olive and aromatic spices
This sort goes well with cream soups, Istrian soup, it gives a fulsome flavour to wild meat, lobster or beef steak.
MORAIOLO
Characteristics:
• Type of oil: very mild bitterness and spiciness
• Colour: light green to golden yellow
• Smell: artichockes, cherry, fried almond, sage
• Taste: very balanced with pleasant bitterness and spiciness
This sort goes well with vegetable soups, fried bread (bruschetta) and beef steak.
